INGREDIENTS for a one gallon batch

  • 3lb 13oz ripe Blackberries (store-bought, or fresh picked)
  • 2lb 4.7oz sugar
  • 1 packet Red Star Premier Rouge Wine Yeast
  • 1tsp Pectic enzyme
  • 1tsp Acid Blend
  • 1 Campden tablet

fermentation timeline

  • Time in Primary Fermentation: 14 days
  • Time in Secondary Fermentation: 92 days
  • Time aging in bottle: 6-12mo
